A spicy yet fragrant rice dish.
Ingredients
- 3 Cups cooked rice

½ cup shredded coconut
- 10 -12 Cashews or ¼ cup peanuts
- 1 Tsp urad daal
- 1 Tsp chana daal
- 2 Tbsp cooking oil
- 1 Tsp black mustard seeds
- 5 - 6 Curry leaves

30g or 1tsp Diced Ginger
- 1 Dried red chili

1 Chopped green chili (optional)
- Chopped coriander for garnish.
- Salt as per taste
Directions
Follow the method you use to cook rice. They should be firm and grainy and not mushy.
Heat the oil in a large pan over medium heat and sizzle with black mustard seeds.
- Add chana dal, urad dal, curry leaves and the dried red chili. Fry it for a minute on low - medium heat.
- Now add the cut green chilies and ginger and cook for about 30 seconds.
- Add your preferred nuts and roast until they turn light brown.
Next add the coconut and 2 - 3 tbsp of water and cook for about a minute. Cook until the raw smell goes away.
- Add the cooked white rice.
- Add the salt mix gently without mashing or breaking the rice. Cover and simmer over low heat for 1 - 2 minutes.
- Adjust the salt. Garnish with chopped cilantro. Serve warm.
