Ingredients
- 1 and ½ Cups red lentils pre-soaked for an hour
- ½ Cup roughly chopped tomato
- 1 Crushed garlic cube ( 3 medium garlic cloves)
-
1 Sliced green chili (optional)
- ½ Cup sliced red onion
- ¼ Tsp cumin seeds
- ¼ Tsp fenugreek seeds
- ¼ Tsp black mustard seeds
- ¼ Tsp nigella seeds ( optional )
- ¼ Tsp fennel seeds
- 1 Bay leaf
- ½ Tsp turmeric powder
- 1 Tbsp cooking oil
- Salt as per taste
- Pinch of freshly ground black pepper
- 1 Tbsp chopped fresh coriander leaves
- Optional Chapatti to serve
Directions
Wash the lentil well until the water runs clear. Pressure cook it with 4 -5 cups of water for 2 - 3 whistles.
Heat the oil in a large saucepan on medium heat. Temper it with bay leaf, cumin, nigella, fenugreek, black mustard and fennel seeds for about a minute.
- Add the onion and saute until they soften, for about 1 - 2 minutes. You can add a splash of water if the onion starts sticking.
Add garlic and cook for about 30 secs - 1 minute until the mixture is wilted and most of its raw smell is gone.
- Add turmeric, a bit of salt(about ½ tsp) and mix well.
- Next add the tomatoes and green chili and cook for another minute. Add a splash of water to keep the spice mixture moist.
- Cover it for a minute and let it cook. Then uncover and stir the mixture adding splashes of water if needed. Cover again and let it cook. Repeat the process for 5 - 6 minutes.
Then uncover and add the cooked lentil. Mix them well and cook it on low heat for 4 -5 minutes until it thickens a bit. (The consistency will be similar to a thick gravy)
- Adjust the salt and sprinkle with a pinch of ground black pepper.
- Serve it warm with roti/ rice or toasted bread.
